Its that time of the year again, its Christmas! This beloved season is sure to bring fond memories of childhood (for those who has always celebrated it) or new experiences for those who are experiencing Christmas on a big scale for the first time. Being in Europe is probably one of the best places to be this festive season, Christmas decorations are in full swing, sales everywhere, Christmas carols being blasted in every store and Christmas markets galore. Christmas is only a month away and for anyone who is thinking of the perfect gift, why not whip a batch of freshly baked cookies for your friends and family       Nutella and Salted Caramel Stuffed Double Chocolate Chip Cookies. Sounds like a mouthful but I can guarantee they taste AMAZING and are so easy to make. I found this recipe on YouTube by the SORTED team last year and made these. Because they are so good I don't only make them on Christmas but anytime I feel like baking chocolate cookies.   Ingredients needed 110 g butter 350 g light brown sugar 55 g cocoa powder 2 eggs 1/4 tsp salt 3/4 tsp baking powder 260 g plain flour 100 g milk / dark chocolate chips 1 sprinkle sea salt 8 tbsp Nutella 16 caramel-filled chocolates   Recipe 1. Having lived in Kenya my whole life I have never seen snow. Imagine my excitement when I woke up one morning to this?  SNOW?! Was this snow? Was this the moment I would run outside and make my first snowball? Nope. It was frost. A frost bad enough to freeze the astro-turf pitch we play hockey on leading to the match being cancelled. Admittedly it was nice to have a lie-in one Saturday morning this Semester! Maybe snow will come closer to Christmas. As an international student you will come across a multitude of things you don't understand or had never previously experienced. It's is both exhausting and exhilarating ! We spent a lovely Sunday at Holkham beach with the dog yesterday :) It's nicer than the pictures I saw in a brochure over the summer, I'm pleased to say. Here are some of the photos I took, hope they convince you to go on a nice day. I'm definitely going back! Autumn is turning colder by the day. I like walking along the Avenues because it's fun to step on as many crunchy leaves as possible and kick them high into the air. Wet days are different though. Soggy leaves are no fun. Come the winter, there will be less sunshine :( and some people suffer from Seasonal Affective Disorder including yours truly. So I'll be stocking up on tealights and treats to make merry with my new friends in the midst of the onslaught that is Christmas commerce.
