International Ambassadors Celebration Event - Biryani Recipe

On the 27th May, International Ambassadors of UEA were invited to an celebration event in regard to their contributions at the International Office.

Part of the event comprised of the Potluck lunch, where every Ambassador was asked to bring a dish from their country.

As a Pakistani, I thought it to be the best to bring Chicken Biryani, so that the International Office and the Ambassadors can have a taste of some authentic Pakistani cooking. As a request from my supervisors, who in particular liked the dish, I am putting up the recipe of cooking the dish. Its relatively easy to cook the dish this way, rather then preparing the dish from scratch.

Ingredients required:

(this list has been modified for the ingredients being available locally in Norwich and in the UK in general)

  • Rice (6 cups; recommended type: Basmati, generally available everywhere in Norwich).
  • Half Chicken in pieces, or 500 grams of Boneless chicken for continence (for those looking for Halal meat, it is available in Anglia Square, or in ASDA).
  • 2 medium sized Potatoes.
  • Sunflower Cooking Oil.
  • 1 medium sized Onion.
  • 1 medium sized tomato.
  • Yogurt (for best results, use Greek Yogurt from Tesco or Co-operative).
  • Biryani Spice (Shan or National; available at ASDA or in Anglia Square).
  • Ginger and Garlic Paste (available at ASDA or in Anglia Square).
  • Salt (as required)

Preparation:

Chicken:

  • Heat about half a cup of Oil, and add 1 TBSP of Ginger & Garlic Paste. Upon its frying, add finely chopped Onion. Fry until it turns Golden Brown.
  • Add Chicken to the oil, and regularly stir until chicken turns from white to light brown.
  • Add salt to taste.
  • Add 2-3 TBSP of the yogurt, and 3/4th of the Biryani Spice. Mix well.
  • Add the chopped Tomato to the mixture and let it dissolve in the mixture.
  • Add chopped potatoes, bring the heat to low, and let the mixture soften the potatoes and completely  dissolve the onions.

Rice:

  • Separately, boil 6 cups of rice, with about 2 TBPS of salt (or as required).
Once both the chicken and rice are prepared, layer them to each other, finishing and ending with Rice.

Keep the mixture on low heat for 5-10 minutes, and mix them well. Serve :)
