Now I have to admit, before I go any further.... i have borrowed these recipes from the UEA Union website www.ueastudent.com, but I had to share as there are some great ideas!

Preparation
- Pre-heat the over to 200C on a Fan oven; 180C normal oven or Gas mark 6.
- Chop up the courgette, aubergine, tomato and onion. Chop them thickly and making sure the veg is chunky.
- Put a medium size pan of water onto boil.
- Place the courgette, aubergines and onions in a roasting tin.
Cooking
- When the oven is heated, drizzle some olive oil and seasoning over the veg and roast for 20 minutes.
- Once the water is boiling, carefully add the pasta and cook until soft.
- When the veg is roasted, toss it, add the tomato and roast for an additional 10 minutes.
- Once the pasta is soft, drain it and add the ratatouille to the pasta.
- Serve up!

Method
Preparation
- Thinly slice the onions; cube the tomato and chop up the chicken.
- Place a medium sized pan of water on Medium heat and add a pinch of salt. When it starts to boil add the rice until its cooked (8-10 minutes).
- Place the non-stick large Frying pan on to medium/Medium high heat. If using regular pan, still place on Medium heat and add a teaspoon of Olive Oil.
Cooking
- In a frying pan on medium heat – fry up the freshly chopped onions (7-9 minutes)
- Once the onions are sufficiently golden, add the chicken and fry until it’s cooked through.
- When rice is sufficiently cooked, drain it and add it to the pan – whilst lowering the heat slightly as to not burn the rice.
- Whilst continually stirring add the frozen peas until piping hot.
- Stir in the chopped tomato – if you want to add a bit of soy sauces, pinch of salt and pepper to season.
- Serve up and you’re ready to go!
